- Fruit Filling: 900 g (6 cups) ripe peaches, peeled, pitted, and sliced (fresh or canned, drained), 80 g (⅓ cup) granulated sugar, 2 tbsp cornstarch, 1 tbsp freshly grated ginger, 1 tbsp lemon juice, ½ tsp vanilla extract
- Crumble Topping: 140 g (1 cup) all-purpose flour, 100 g (½ cup) light brown sugar packed, ½ tsp ground ginger, ¼ tsp ground cinnamon, ¼ tsp salt, 115 g (½ cup) unsalted butter cold and cubed
Instructions

- In another bowl, whisk together flour, brown sugar, ground ginger, cinnamon, and salt. Add the cold butter cubes. Using a pastry cutter or your fingertips, work the butter into the dry mixture until it resembles soft, coarse crumbs.

- Sprinkle the crumble topping evenly over the peach filling.

- Bake for 35 minutes, or until the topping is golden and the filling is bubbling around the edges.
