10 - ¼ teaspoon ground cinnamon
11 - ¼ teaspoon salt
12 - ½ cup unsalted butter, cold and cubed

# Directions:

01 - Preheat the oven to 350°F. Lightly grease a 9-inch baking dish.
02 - In a large bowl, mix peaches, granulated sugar, cornstarch, grated ginger, lemon juice, and vanilla extract until peaches are evenly coated. Spread the mixture evenly in the prepared baking dish.
03 - In a separate bowl, whisk together flour, brown sugar, ground ginger, cinnamon, and salt. Add cold butter cubes and use a pastry cutter or fingertips to blend until mixture resembles soft, coarse crumbs.
04 - Sprinkle the crumble topping evenly over the peach filling. Bake for 35 minutes, or until the topping is golden and filling bubbles around edges.
05 - Remove from oven and cool for 10 to 15 minutes. Serve warm, optionally with vanilla ice cream or whipped cream.
