01 - 10.5 oz smoked sausage (such as kielbasa or andouille), sliced into 0.6 inch rounds

02 - 6.3 oz firm cheese (cheddar, gouda, or provolone), cut into 0.8 inch cubes

03 - 1 large red bell pepper, cut into 1 inch pieces
04 - 1 small red onion, cut into chunks

→ Marinade

05 - 2 tbsp olive oil
06 - 1 tsp smoked paprika
07 - 1/2 tsp dried oregano
08 - 1/4 tsp garlic powder
09 - 1/4 tsp freshly ground black pepper

10 - 1 tbsp fresh parsley, chopped

# Directions:

01 - In a small bowl, whisk together olive oil, smoked paprika, oregano, garlic powder, and black pepper until well combined.
02 - In a large bowl, add sausage slices, bell pepper pieces, and onion chunks. Drizzle marinade over and toss gently to ensure even coating.
03 - Thread sausage, cheese, bell pepper, and onion alternately onto skewers, starting and ending with sausage to secure the ingredients.
04 - Heat a grill or grill pan over medium-high heat until hot.
05 - Place skewers on the grill and cook for 10 to 12 minutes, turning occasionally. Add cheese cubes after 5 to 6 minutes to prevent excessive melting. Grill until vegetables are tender and sausage is heated through.
06 - Transfer skewers to a serving platter, sprinkle with chopped parsley, and serve immediately while hot.
