# What You'll Need:

→ Yogurt Base

01 - 2 cups plain Greek yogurt (full-fat or 2%)
02 - 2 tablespoons honey or maple syrup
03 - 1 teaspoon vanilla extract

→ Swirl Components

04 - 2 teaspoons matcha powder
05 - 1 tablespoon warm water
06 - 3 tablespoons pistachio cream or smooth pistachio butter
07 - 1/4 cup fresh raspberries
08 - 1/4 cup fresh blueberries
09 - 2 teaspoons sugar or agave syrup, divided

→ Toppings

10 - 2 tablespoons chopped pistachios
11 - 1/4 cup mixed fresh berries (raspberries, blueberries, strawberries), sliced if large

# Directions:

01 - Line a 9x13 inch baking sheet with parchment paper.
02 - In a medium bowl, mix Greek yogurt with honey and vanilla extract until smooth.
03 - Evenly spread the yogurt mixture onto the lined baking sheet to a thickness of approximately 1/2 inch.
04 - Whisk matcha powder with warm water in a small bowl until smooth.
05 - Warm pistachio cream slightly if needed to ensure it drizzles easily.
06 - In separate bowls, mash raspberries and blueberries each with 1 teaspoon of sugar or agave syrup until saucy but still textured.
07 - Drop spoonfuls of matcha paste, pistachio cream, raspberry puree, and blueberry puree over the yogurt. Gently swirl with a skewer or knife to create a marbled pattern.
08 - Sprinkle chopped pistachios and mixed berries evenly over the swirled yogurt.
09 - Freeze uncovered for at least 3 hours or until fully set.
10 - Break or cut the frozen bark into pieces and serve immediately, or store in an airtight container in the freezer for up to two weeks.

# Expert Advice:

01 -
  • It looks stunning with barely any effort, making you feel like a culinary genius.
  • The combination of creamy, tangy, and fruity flavors hits that sweet spot between indulgent and actually good for you.
  • Once it's in the freezer, you can forget about it and enjoy a ready-made treat whenever you need something cool and satisfying.
02 -
  • Don't skip whisking the matcha smooth—lumps will stay gritty forever and ruin the elegance you're going for.
  • The yogurt needs to be spread evenly or you'll end up with thick areas that stay soft and thin areas that freeze rock-solid.
  • Your freezer needs to be properly cold; if it's set too warm, the bark will stay slightly soft even after hours.
03 -
  • Let all your components reach room temperature together before you start swirling—cold pistachio cream won't drizzle properly, and cold berry puree will seize up in lines instead of flowing.
  • If you mess up the swirling and it looks chaotic, honestly it still tastes incredible and probably looks more interesting than if it were perfect.
